African Peanut Soup
Here is a fall favorite, rich and hearty, with a little spice to help warm & nourish the soul.
Ingredients1 cup Brown Rice
2 cups Water 1 tablespoon Olive Oil 2 cups Onion, diced 1 cup Celery, diced 1 pound raw Chicken, diced 1 cup Bell Pepper, diced 2-4 cloves Garlic, minced 2 cups Tomatoes, diced 4 cups Vegetable Broth 2 cups Sweet Potato, diced 2-4 teaspoons Paprika 1-2 teaspoon Cumin 1-2 teaspoons Ginger 2 cups Brown Rice, cooked 2 tablespoons Peanut Butter |
DirectionsCook Brown Rice in Water for 40-50 minutes, let rest and cool.
Add Olive Oil to large pan on medium heat. Sauté Onion and Celery over medium heat for 5 minutes. Add Chicken, Bell Pepper and Garlic to pan and continue to cook over medium heat for 5-10 minutes. Stir in Tomatoes, Vegetable Broth, Sweet Potato, Paprika, Cumin & Ginger and bring to boil. Reduce heat, simmer covered for 10-15 minutes, stirring occasionally. Add Rice & Peanut Butter and slowly stir on low heat for 5 minutes. Salt & Pepper to taste. Makes up to eight, 2 cup servings.
